Sweet and Sour Pork

1-2 lbs lean, boneless pork cut into 1in pieces
1-2 Tbs olive oil (e-v-o-o)
the juice from a 16oz can of chunk pineapple
1/3 c ketchup
2 Tbs low sodium soy sauce
2 large garlic cloves
1/4 c red wine vinegar
green onions, coarsely chopped
pineapple chunks, I cut in half
Brown pork in a skillet with olive oil over med. heat, covered for about 25-30 min. adding water if need so as to not dry out. Meanwhile, mix ALL other ingredients, except green onions and pineapple, in a bowl with a whisk. Add to pork after cooking for approx 30min and render covered for an additional 25-30 min, adding the green onions and pineapple the last 10min. Serve over rice. Enjoy
